Crepes

I'll be honest, crepes are not my go-to easy morning breakfast. They're on our rotation because they're a huge hit in our house. But, I don't hesitate to skip them if I just can't stand at the stove for 30 minutes gently flipping fragile crepes! š
Feel free to half this recipe if your family is smaller! I usually figure 2 per "big kid" and myself, 4 for my husband, and 1 for each little kid, at a minimum! No one complains if there are more!
Ingredients
4 cups milk
4 eggs
4 cups flour
1/4 cup oil
A pinch of salt (about 1/4 tsp)
A splash of vanilla
Butter (for pan)
Optional: a drizzle of honey or maple syrup, not essential
Instructions
Add all ingredients to the blend and blend until thoroughly mixed.
Heat a pan over medium to medium high heat. Greased the pan with butter (and between each crepe). Pour the batter into the pan and swirl until coated with a thin layer of batter. Watch and flip when set. These cool quickly so donāt stray too far from the stove!




Makes about 18 crepes.
You can absolutely eat these with just some maple syrup and butter, but it's oh so much better to use some kind of fun fruit topping!
I often make a cream cheese frosting type mix for the inside (sometimes with added fruit), whipped cream for the top, and whatever fruit added wherever I decide that day!
