Loco Moco-ish
This is our very not-authentic, very practical, family-style version of loco moco: burger patties, rice, eggs, and a simple homemade brown gravy with soy sauce. It is cozy, filling, and easy enough for a weeknight dinner or breakfast.

Ingredients:
Cooked white rice
Burger patties
Eggs
1/2 cup butter (1 stick)
1/2 cup flour
About 3/4 of a carton of beef stock
Seasoning, to taste (black pepper and anything else you want to sprinkle in)
Soy sauce, to taste
Instructions:
Start your rice. While it cooks....
Cook the burger patties in a skillet until browned and cooked through. Remove them from the pan and set aside.
In the same skillet, melt the butter.
Whisk in the flour to make a roux. Cook for a few minutes, stirring often, until the flour is lightly browned and the mixture smells warm and toasty.
Whisk in the beef stock.
Season the gravy to taste. Add soy sauce a little at a time until the gravy has the flavor you like.
Cook the eggs in a separate pan. Fried eggs are the classic choice, but cook them however your family prefers.
To serve, place rice in a bowl or on a plate. Add a burger patty, spoon gravy over the top, and finish with an egg. (or, egg first is usually what we do, mother's choice!)

I am going to say right up front: this is not an authentic Hawaiian loco moco recipe. This is more like “a mom in Alaska made burger patties, eggs, rice, and gravy, and everyone was happy.”
Real loco moco is a beloved Hawaiian comfort food traditionally made with rice, a hamburger patty, brown gravy, and a fried egg. Our version keeps that same basic idea, but I make it in a very simple, family-dinner kind of way with ingredients I usually have on hand. I'm fairly certain the authentic version uses cornstartch to thicken, not a roux. I've also been known to add a splash of cream to gravy, ha! It's delcious.
It is cozy, filling, and one of those meals that feels bigger than the amount of work it takes.
